Recipe for the day ~ Lemon Chicken with Pototoes

Lemon Chicken with Potatoes

Lemon Chicken with Potatoes

Ingredients;
3 TBspns butter
2 TBspns packed brown sugar
1 1/2 tspns Italian seasoning
1 tspn salt
1 package (28 ounce) boneless skinless chicken thighs
1 lb baby red potatoes, quartered
1/2 medium onion, cut into large pieces
1 lemon, sliced
1/4 tspn black pepper

Directions:
Preheat oven to 400
Spray 9x13 baking dish with cooking spray
Meanwhile, in a 10-inch nonstick skillet, melt 2 TBspns butter over medium-high heat
In a small bowl, stir together brown sugar, Italian seasoning and 1/2 tspn salt
Sprinkle over chicken thighs
Cook chicken thigh in skillet 3 to 4 minutes on each side or until gold brown 
Arrange chicken thighs, potatoes, onions and lemon slices in baking dish
Sprinkle with remaining salt and 1/4 tspn black pepper
Melt remaining 1 TBspn butter and drizzle over mixture
Bake for about 35 minutes or until potatoes are tender and juice is clear when thickest part is cut

Recipe for the day ~ Blueberry Banana Bread


Blueberry Banana Bread

Ingredients;
2 cups all-purpose flour
1 tspn baking soda
1/2 tspn salt
1/2 cup butter, softened
1 cup white sugar
2 eggs
2 tspns vanilla extract
2 ripe bananas, mashed
1 cup blueberries

Directions;
Preheat oven to 350
Grease a loaf pan or bundt pan
Mix flour, baking soda and salt together in a bowl
Beat butter and sugar with an electric mixer in a large bowl until light and fluffy
The mixture should be noticeably lighter in cooler
Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract
Beat mashed bananas thoroughly into the mixture
Add flour mixture in small increments while beating until just combined into a thick batter
Fold blueberries into the batter
Pour in prepared pan
Bake for about 35 minutes
Cool in pan for 10 minutes before removing to cool completely on a wire rack

Recipe for the day ~ Loaded Baked Potato Casserole


Loaded Baked Potato Casserole

Ingredients:
8 potatoes, cubed (half peeled or half with skin)
2 tspns salt
6 slices bacon, diced and crisp cooked
6 green onions
2 cups cheddar cheese, shredded
16 ounces sour cream
1/4 tspn pepper
1 cup mayonnaise

Directions:
Preheat oven to 350
Cube and boil potatoes in salt
Drain
Crumble bacon and slice onions (including tops)
Combine sour cream, pepper and mayonnaise
Add to potatoes
Add bacon, onions and cheese (reserve some of each for the top)
Mix with potatoes
Pour into a 9x13 baking dish
Top with reserved cheese, onions and bacon
Bake for about 10 minutes or until cheese is completely melted

Recipe for the day ~ Snickerdoodles


Snickerdoodles
(I've had this recipe for many years ~ not sure where I got it but they are awesome cookies)

Ingredients:

1 1/2 cups sugar
1/2 cup margarine (softened)
1/2 cup shortening
2 eggs
2 3/4 cups all-purpose flour
2 tspns cream of tartar
1 tspn baking soda
1/4 tspn salt
3 TBspns sugar
1 Tbspn ground cinnamon

Directions:

Heat oven to 400
Mix 1 1/2 cups sugar, margarine, shortening and eggs in a large bowl
Stir in the flour, cream of tartar, baking soda and salt
Shape dough dough by rounded teaspoonfuls into balls
Mix 3 TBspns sugar and 1 TBspn ground cinnamon in a small bowl
Rolls balls into mixture
Place 2 inches apart on a un-greased cookie sheet
Bake for about 8 minutes
Immediately remove from cookie sheet
Cool completely on a wire rack

Chocolate Chip-Cinnamon Breakfast Ring

Chocolate Chip-Cinnamon Breakfast

Ingredients:
1/2 cup butter, softened
2 (12.4 ounce) cans Pillsbury™ Refrigerated Cinnamon Rolls with Icing
1 (3.4 ounce) package vanilla pudding and pie filling (NOT instant)
1/2 cup firmly packed brown sugar
1/4 cup miniature semisweet chocolate chips

Directions:
Heat oven to 375
Using 1 TBspn of the butter, generously butter 12-cup fluted tube or bundt pan
In a small microwavable bowl, microwave butter on HIGH for 1 minute or until melted when stirred
Separate both cans of dough into 16 rolls
Cut each roll in half crosswise
Place half of roll pieces in pan
Sprinkle with half of the dry pudding mix and half of the brown sugar
Drizzle with half the melted butter
Repeat with remaining roll pieces, pudding mix, brown sugar and melted butter
Sprinkle with chocolate chips
Bake for about 25 minutes or until rolls are deep golden brown and dough appears done when slightly pulled apart
Cool in pan for 2 minutes
Place heatproof serving platter upside down over pan
Turn platter and pan over
Remove pan
Cool for 115 minutes
Remove lid from icing
Microwave icing on HIGH for about 15 seconds
Drizzle icing over ring
Cut into wedges to serve

Ingredients:
8 slices of bacon
8 all-beef hot dogs
8 hot dog buns
8 slices Swiss cheese
1/2 cup barbeque sauce or amount to taste
1 small red onion

 Directions:
Preheat outdoor grill for medium-high
Lightly oil grate and set 4 inches from the heat
Place the bacon in a large, deep skillet
Cook over medium-high heat until evenly brown
Drain on paper towels
Place hot dogs on the grill
Cook until brown (5-8 minutes)
Lightly grill hot dog buns
To assemble - place a slice of cheese and bacon on each hot dog bun
Add a hot dog
Top each with 1 Tbspn of barbeque sauce and red onion

Ingredients:
3 eggs, lightly beaten
1 cup vegetable oil
3 tspns vanilla extract
2 1/4 cups white sugar
2 cups shredded zucchini
3 cups all-purpose flour
1 tspn salt
1 tspn baking powder
1/4 tspn baking soda
1 TBspn ground cinnamon
1 pint fresh blueberries

Directions:
Preheat oven to 350
Lightly grease a loaf pan or I used a bundt pan
In a large bowl, beat together the eggs, oil, vanilla and sugar
Fold in the zucchini
Beat in the flour, salt, baking powder, baking soda and cinnamon
Gently fold in the blueberries
Transfer to the prepared baking pan
Bake for 50 minutes or until a knife inserted in the center of the bread comes out clean
Cool 20 minutes in pan then turn out on a wire rack to cool completely

Ingredients:
4 eggs
1 cup vegetable oil
2 cups white sugar
1 (15 ounce) can solid pack pumpkin puree
2 cups all-purpose flour
2 tspns ground cinnamon
1/2 tspn ground cloves
1/2 tspn ground ginger
1/2 tspn ground nutmeg
1 tspn baking soda
2 tspns baking powder
1/2 tspn salt

Directions:
Preheat oven to 350
Grease a 9x13 inch baking pan
In a medium bowl, mix together the eggs, oil, sugar and pumpkin until smooth
Stir together the flour, cinnamon, cloves, ginger, nutmeg, baking soda and salt
Stir into the pumpkin mixture
Spread evenly into the prepared pan
Bake for about 45 minutes
The bars should spring back to the touch when done
*optional* when cool, you can frost with a cream cheese frosting or flavor of choice

Slow-Cooker Bacon-Ranch Chicken and Pasta

Slow-Cooker Bacon-Ranch Chicken and Pasta

Ingredients:
1 lb chicken breast
6 slices bacon, cooked and diced
2 to 3 cloves garlic, finely chopped
1 package (1 ounce) ranch dressing and seasoning mix
1 can (10.75 once) condensed cream of chicken soup
1 cup sour cream
1/2 tspn pepper
1/2 cup water
8 oz spaghetti, cooked

Directions:
Spray 4-quart slow-cooker with cooking spray
Place chicken breast in slow cooker
In a medium bowl, mix remaining ingredients except spaghetti
Pour over the top of chicken
Cover and cook on LOW heat setting 6 hours or on HIGH heat setting for 3-4 hours
When about 15 minutes are left, cook and drain spaghetti noodles as directed on package
Jest before serving, shred chicken with 2 forks
Toss creamy chicken mixture with cooked spaghetti

Ingredients:
1 (18.25 ounce) package yellow cake mix
1 egg
1/2 cup butter, melted
1 (29 ounce) can pumpkin puree
2 eggs
1 tspn nutmeg
1 tspn ground cinnamon
1/2 cup white sugar
2/3 cup evaporated milk
3/4 cup white sugar
1/2 cup butter, softened

Directions:
Preheat oven to 350
Set aside 1 cup cake mix for the topping
Combine remaining cake mix, 1 egg and 1/2 cup melted butter
Pat into a 9x13 inch baking pan
In a large bowl, mix pumpkin, 2 eggs, 1 tspn nutmeg, 1 tspn ground cinnamon, 1/2 cup sugar and 2/3 cup evaporated milk
Pour pumpkin mixture over the cake mix crust
In a small bowl, combine 1 cup cake mix and 3/4 cup sugsr
Cut in 1/2 cup softened butter until mixture resembles coarse crumbs
Sprinkle mixture on top of pumpkin mixture
Bake for about 1 hour
**Serve with vanilla ice cream or whipped topping**

Ingredients:
2 boxes (9 ounce each) Green Giant™ frozen chopped spinach
2 jars (14 to 15 ounce each) Alfredo pasta sauce
1 can (11 ounce) Pillsbury™ refrigerated French loaf

Directions:
Heat oven to 350
Make both boxes of spinach as directed on the boxes
Squeeze cooked spinach between paper towels to remove excess moisture
In a large bowl, mix spinach and Alfredo sauce until well combined
Transfer to un-greased 10 or 12 inch cast-iron skillet
Cut French loaf into 24 slices, about 1/2 inch thick
Arrange slices in a ring around the edge of the skillet, overlapping slightly
Bake for about 30 minutes or until dough is done and deep golden brown and the filling is bubbly
Cool 5 minutes
Serve warm

Ingredients:
1/2 cup vegetable oil
1 1/2 cups white sugar
2 tspns vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 tspns baking soda
1 tspn salt
2 cups shredded zucchini
1/2 cup chopped walnuts
6 Tbspns unsweetened cocoa powder
1/4 cup margarine
2 cups confectioner's sugar
1/4 cup milk
1/2 tspn vanilla extract

Directions:
Preheat oven to 350
Grease and flour a 9x13 baking pan
In a large bowl, mix together the oil, sugar, and 2 tspns vanilla extract until well blended
Combine the flour, 1/2 cup cocoa, baking soda and salt
Stir into the sugar mixture
Fold in the zucchini and walnuts
Spread evenly into the prepared pan
Bake for about 30 minutes

Frosting Directions:
Melt together the 6 Tbspns of cocoa and margarine
Set aside to cool
In a medium bowl, blend together the confectioner's sugar, milk and 1/2 tspn vanilla extract
Stir in the cocoa mixture
Spread over cooled brownies before cutting into squares

Tortellini Bacon Broccoli Salad

Ingredients:
2 (9 ounce) packages of refrigerated three-cheese tortellini
1 pound bacon
4 cups chopped broccoli
1 pint grape tomatoes, halved
2 green onions, finely chopped
1 cup bottled coleslaw dressing

Directions:
Cook the tortellini according to the package directions
Drain, rinse with cold water 
Refrigerate until cool (about 30 minutes)
Place the bacon in a large, deep skillet
Cook over medium-high heat, turning occasionally until evenly browned (about 10 minutes)
Drain the bacon slices on a paper towel-lined plate
Chop the bacon into 1/2-inch pieces while it's still warm
Place the tortellini, bacon, broccoli, grape tomatoes, and green onions into a salad bowl
Pour the dressing over the ingredients
Toss lightly to coat
Chill in refrigerator before serving

Ingredients:
1 can (17.5 ounce) Pillsbury™ Grands refrigerated cinnamon rolls with cream cheese icing (5 rolls)
2 TBspns milk
1/4 tspn instant coffee granules or crystals
1/2 cup white baking chips
1/2 cup chopped pecans

Directions:
Heat oven to 350
Spray 9-inch round cake pan with cooking spray
Place cinnamon rolls in pan; reserve icing
Bake for about 25 minutes or until golden brown
Cool slightly
Meanwhile, in a small microwavable bowl, microwave 1 Tbspn of milk uncovered on HIGH for about 20 seconds or until hot
Stir in coffee granules until completely dissolved
Stir in reserved icing
Microwave uncovered on HIGH for 25 seconds
Stir in baking chips and remaining 1 Tbspn of milk
Microwave 25 seconds longer
Stir until chips are completely melted (Microwave additional 10 second increments if necessary)
Stir in pecans
Pour over rolls and serve warm

 Slow-Cooked Taco Chicken Recipe

Slow-Cooked Taco Chicken

Ingredients:
2 1/2 pounds skinless boneless chicken breast halves
salt and ground black pepper
3 medium onions, diced
2 cups Swanson® Mexican Tortilla Flavor Infused Broth
2 TBspns tomato paste
20 (8 inch) flour tortillas or taco shells, warmed
Shredded lettuce
Sour Cream
Shredded Cheddar Cheese
Salsa and/or guacamole

Directions:
Season the chicken with salt and pepper
Place the chicken in the slow cooker
Add onions and broth
Cover and cook on HIGH for 4-5 hours or until the chicken is fork tender
Using 2 forks, shred the chicken
Stir in the tomato paste
Spoon about 1/3 cup chicken mixture in the center of each tortilla
Top with lettuce, sour cream, cheese, salsa and/or guacamole - if desired
Fold the tortillas around the filling - ENJOY!

1 (29 ounce) can sliced peaches in heavy syrup, undrained
1 (18.25 ounce) box yellow cake mix
3/4 cup butter, sliced into pats, or more if needed

Directions:
Preheat oven to 350
Grease a 9x13 baking dish with margarine
Pour peaches with heavy syrup into the prepared baking dish
Spread cake mix even;y over the peaches
Arrange butter pats in even rows on the cake cake mix
Bake for about 45 minutes or until top of cake is golden brown

Recipe for the day ~ Beer Butt Chicken

Ingredients:
1 cup butter
2 Tbspns garlic salt
2 Tbspns paprika
salt and pepper to tast
1 (12 ounce) can of beer
1 (4 pound) whole chicken

Directions:
Preheat outdoor grill for low heat
In a small skillet, melt 1/2 cup butter
Mix in 1 Tbpsn garlic salt, 1 TBspn paprika, salt and pepper
Discard half the beer, leaving remainder in the can
Add remaining butter, garlic salt, paprika, salt and pepper (to taste) to beer can
Place can on a disposable baking sheet
Set chicken on can, inserting can into the cavity of the chicken
Baste chicken with the melted seasoned butter
Place baking sheet with beer and chicken on the grill
Cover over low heat for about 3 hours or until internal temperature of chicken reaches 180 degrees

Recipe for the day ~ Happy National S'Mores Day

Ingredients:
3/4 cup white sugar
1/2 cup butter, softened
1 egg
1 1/2 cups all-purpose flour
1 tspn baking powder
1/4 tspn salt
1 1/2 cups milk chocolate candy bar, chopped
3 cups miniature marshmallows
1/2 cup chopped peanuts (chopped) - optional

Directions:
Preheat oven to 350
Lightly grease 9x13x2 inch pan
In a large mixer bowl, combine sugar, butter and egg until creamy (about 2 minutes)
Add flour, baking powder and salt until blended
Spread batter onto baking pan
Bake 10-12 minutes, until set
Sprinkle chopped chocolate bar over batter
Top with marshmallows and peanuts
Continue to bake for another 10-12 minutes until marshmallows are lightly brown
Cool completely before cutting into squares

Slow Cooker Chicken Pot Pie

Ingredients:
4 large skinless, boneless chicken breast halves, cut into cubes
10 medium red potatoes, quartered
1 (8 ounce) package baby carrots
1 cup chopped celery
2 (26 ounce) cans condensed cream of chicken soup
6 cubes chicken bouillon
2 tspns garlic salt
1 tspn celery salt
1 Tbspn ground black pepper
1 (16 ounce) bag frozen mixed vegetables

Directions:
Combine the chicken, potatoes, carrots, celery, chicken soup, chicken bouillon, garlic salt, celery salt and black pepper in a slow cooker
Cook on HIGH for 5 hours
Stir the frozen mixed vegetables into the slow cooker
Cook for 1 hour longer
**Serve with biscuits or plain white rice**

Ingredients:
3 egg whites
3/4 cup white sugar
1 cup flaked coconut, toasted
1/2 cup toasted and slice almonds
5 fresh peaches, pitted and sliced
1 cup heavy whipping cream, whipped
1/4 cup flaked coconut, toasted

Directions:
Beat egg whites until soft peaks form
Gradually add sugar, beating until very stiff and glossy
Fold in toasted coconut and almonds
Spoon in a 9-inch pie plate to form a shell
Bake at 350 for about 30 minutes
Let cool
Fill with sliced peaches
Top with whipped cream and toasted coconut
Chill until ready to serve

Ingredients:
1 (10 ounce) bag baby spinach leaves
1 quart fresh strawberries
4 ounces crumbled feta cheese
1 small sweet onion (such as Vidalia®), sliced
1 (2 ounce) package bacon bits
1/2 (16 ounce) bottle reduced-fat raspberry vinaigrette salad dressing

Directions:
Place spinach into a large salad bowl
Slice strawberries over spinach
Sprinkle with feta cheese, onion and bacon bits
Pour dressing over salad and toss to coat

Recipe for the day ~ Happy National Root Beer Float Day!!!


Gourmet Root Beer Float

Ingredients:
1/2 pint vanilla ice cream
1 (12 fluid) can or bottle root beer
1/2 cup whipped cream
4 maraschino cherries (I don't like cherries so I don't use them)

Directions:
Place 1 scoop of ice cream into each of 2 tall glasses
Pour root beer carefully over the ice cream
Add another scoop and repeat
If possible, repeat again
Top each with whipped cream and cherries

Recipe for the day ~ Chocolate Eclair Dessert


Chocolate Eclair Dessert

Ingredients:
2 individual packages graham crackers
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk 
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) prepared chocolate frosting

Directions:
Line the bottom of a 9x13 inch pan with graham crackers
In a large bowl, combine pudding mix and milk; stir wll
Mix in the whipped topping
Spread half the mixture over the graham cracker layer
Top with another layer of graham crackers and the remaining pudding mixture
Top all with a final layer of graham crackers 
Frost with the chocolate frosting
Refrigerate at least 2 hours before serving to allow the graham crackers to soften

Tangy Cucumber and Avocado Salad Recipe

Tangy Cucumber and Avocado Salad

Ingredients:
2 medium cucumbers, sliced
2 avocados, cubed
4 TBspns chopped fresh cilantro
1 garlic clove, mined
2 TBspns minced green onion
1/4 tspn salt
black pepper to taste
1/4 large lemon
1 lime

Directions:
In a large bowl, combine cucumbers, avocados, and cilantro
Stir in garlic, onions, salt and pepper
Squeeze lemon and lime over the top and toss
Cover and refrigerate at 30 minutes before serving

Hot Fudge Ice Cream Bar Dessert Recipe

Hot Fudge Ice Cream Bar Dessert

Ingredients:
1 (16 ounce) can chocolate syrup
3/4 cup peanut butter
19 ice cream sandwiches
1 (12 ounce) container frozen whipped topping, thawed
1 cup salted peanuts

Directions:
Pour chocolate syrup into a medium microwave-safe bowl
Microwave until hot, about 2 minutes on high, stirring every 30 seconds
Do not allow to boil
Stir in peanut butter into hot chocolate until smooth
Allow to cool to room temperature
Line the bottom of a 9x13 dish with a layer of ice cream sandwiches
Spread half the whipped topping over the sandwiches
Spoon half the chocolate mixture over all that
Top with half the peanuts
Repeat layers
Freeze until firm, at least 1 hour
Cut into square to serve
