Recipe for the day ~ Pasta Salad


Pasta Salad
**This is one of my favorites**

Ingredients:
1 (16 ounce) package fusilli (spiral) pasta
3 cups cherry tomatoes, halved
1/2 pound provolone cheese, cubed
1/2 pound salami, cubed
1/4 pound sliced pepperoni, cut in half
1 large green pepper, cut into 1 inch pieces
1 (10 ounce) can black olives, drained
1 (4 ounce) jar pimentos, drained
1 (8 ounce) bottle Italian salad dressing

Directions:
Bring a large pot of lightly salted water to a boil
Add pasta and cook for about 8 to 10 minutes or until al dente
Drain and rinse with cold water
In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives and pimentos
Pour salad dressing and toss to coat

Recipe for the day ~ Raspberry Sour Cream Pie




Raspberry Sour Cream Pie

Ingredients:
2 (9 inch) unbaked pie crust
2 eggs 
1 1/3 cup sour cream
1 tspn vanilla extract
1 cup white sugar
1 pinch salt
1/3 cup all-purpose flour
3 cups raspberries
1/2 cup brown sugar
1/2 cup all-purpose flour
1/2 cup chopped walnuts
1/4 cup butter, chilled 

Directions:
Preheat oven to 400
In a large bowl, beat eggs until light and lemon color
Whisk in sour cream and vanilla
In a separate bowl, mix sugar, flour and salt together
Stir in egg mixture
Gently fold in raspberries
Divide into 2 unbaked pie crusts
Bake for about 35 minutes or until the center begins to set
Sprinkle with topping and return to the oven for about another 15 minutes

**To make the topping**
In a medium bowl, mix together brown sugar, flour and chopped nuts
Cut in the butter until crumbly

Slow Cooker Italian Beef for Sandwiches Recipe

Slow Cooker Italian Beef for Sandwiches

Ingredients:
3 cups waters
1 tspn salt
1 tspn ground black pepper
1 tspn dried oregano
1 tspn dried basil
1 tspn onion salt
1 tspn dried parsley
1 tspn garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast

Directions:
Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan
Stir well and bring to a boil
Place roast in slow cooker and pour salad dressing mixture over the meat
Cover and cook on LOW for 10 to 12 hours or on HIGH for 4 to 5 hours
When done, remove bay leaf and shred meat with a fork

Recipe for the day ~ Frosty Strawberry Squares

Ingredients:
1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cu chopped walnuts
1/2 cup butter, melted
2 eggs
1 cup white sugar
2 cups sliced strawberries
2 Tbspns lemon juice
1 cup heavy cream

Directions:
Preheat oven to 350
Grease a 9x13 inch baking dish
Line a rimmed baking sheet with aluminum foil
In a bowl, stir together the flour, brown sugar, walnuts and melted butter
Toast in the oven until walnuts are fragrant (about 150 minutes); stirring occasionally
Sprinkly 2/3 of the walnut mixture evenly over the bottom of the 9x13 dish
In a large bowl, whip the egg whites with the lemon juice until they can hold a soft peak
Gradually add the white sugar while continuing to whip to firm peaks
Fold in the strawberries
In a separate bowl, whip the cream with an electric mixer until stiff but not grainy
Fold into the strawberry mixture
Spoon over the crust in the dish and spread evenly
Top with the remaining walnut mixture
Freeze for about 6 hours or overnight

Recipe for the day ~ Japanese Chicken Wings


Japanese Chicken Wings

Ingredients:
3 pounds chicken wings
1 egg, slightly beaten
1 cup all-purpose flour for coating
1 cup butter

For the Sauce:
3 Tbspns soy sauce
3 Tbspns water
1 cup white sugar
1/2 cup white vinegar
1/2 tspn garlic powder or to taste
1 tspn salt

Directions:
Preheat oven to 350
Cut wings in half or if they are already cut to size then dip in egg and coat with flour
Heat butter in a large, deep skillet over medium-high heat
Fry wings until they are deep brown
Place on a shallow roasting pan
In a small bowl combine soy sauce, water, sugar, vinegar, garlic powder and salt
Pour over wings
Bake in the oven for about 45 minutes, basting wings with sauce often

Recipe for the day ~ American Flag Cake


American Flag Cake

Ingredients:
3 (10.25 ounce) packages white cake mix
9 egg whites
1 cup vegetable oil
3 3/4 cups milk
2 Tbspns clear vanilla extract
2 Tbspns red food coloring
1 Tbpn blue food coloring
1 cup white chocolate chips
10 cups fluffy white frosting
1 Tbspn white chocolate chips or as needed
2 Tbspns white sugar or as needed
1 (4-inch) round paper or cardboard stencil

Directions:
Preheat oven to 350
Grease and line 4 (8 - inch) round cake pans with parchment paper
Combine white cake, egg whites, vegetable oil, milk and vanilla extract in a large mixing bowl
Beat for 30 seconds using an electric mixer on low speed
Increase mixer speed to medium and beat for 2 more minutes
The batter will be slightly lumpy
To make the red cakes, measure 1/2 the batter into a separate bowl and whisk in red food coloring
Evenly transfer the red batter into 2 of the 8-inch round cake pans
Smooth tops of batter with a spatula
Transfer half of the remaining uncolored batter into the 3rd round cake pan
Smooth the top as before (This will be the white portion of the cake)
Add blue food coloring to the remaining uncolored batter in the large mixing bowl
Fold 1 cup white chocolate chips into the blue batter until combined
Transfer blue batter to remaining 8-inch round cake pan
Smooth the top of the batter with a spatula
Bake all 4 cakes in the oven until a toothpick inserted into the center comes out clean, this should take about 30 minutes of baking
Remove the cakes from the oven and let cool completely
Run a knife around the edge of each cooled cake
Invert cakes, remove pans and peel off parchment paper
Use a sharp knife to trim tops of cakes flat and even
Cut both of the red cake layers and the white cake layer in half horizontally
You will have 4 thin red cake layers and 2 white cake layers
Place a 4-inch round stencil on top of 1 thin red cake layer
Cut out a 4-inch red cake round
Repeat, placing stencil on 1 thin white cake layer to make 1 4-inch white cake round
Center the 4-inch round stencil on the blue cake and cut out and remove center portion covered by the stencil to make a blue cake ring
To assemble the cake, you will need 2 thin 8-inch red cake layer, 1 thin 8-inch cake layer, 1 4-inch thin red cake circle, 1 4-inch thin white cake circle and 1 blue 8-inch cake ring
Reserve the leftover thin red cake layer and other cake pieces for making crumbs for decorating
To assemble cake, place 1 8-inch thin red cake layer on a cake pan and frost the top generously with white frosting
Place the thin 8-inch white cake layer on top of the red and frost the top
Place remaining 8-inch thin red cake layer on top of the white one and frost
Place the blue ring cake on top of the 2nd red cake layer and carefully frost the inside of the blue cake ring
Gently fit the 4-inch white cake layer into the blue ring
Frost the top of the 4-inch white center
Place the 4-inch red cake layer on top of the white one
Gently press small cake circles flush with the to of the blue ring
Frost the entire outside of the cake generously with the remaining frosting
Crumble red and blue pieces of leftover cake into separate bowls
Score lines into the top of the cake's frosting with a kitchen knife to make a flag design on top of the cake
It should have a 2-inch square at the upper left for blue field and white stars and 7 thick horizontal stripes about 1 inch wide
Fill the square field at the upper left with blue crumbs and press 1 Tbspn of white chocolate chips upside-down into the blue crumbs to make "stars"
Fill the bottom stripe and every other stripe with red crumbs to make red stripes
Sprinkle white sugar generously into the white stripes to make stand out
To serve cake, cut cake into wedges
The inside of the cake will reveal it's layers of red and white stripes and blue field with white chocolate chip stars in every slice

2 small cucumbers, thinly sliced
1/2 small red onion, thinly sliced
1 large tomato, halved and sliced
3 Tbspns maynnaise
1 Tbspn white vinegar
1/4 tspn salt
1/2 tspn ground black pepper

Directions:
In a medium bowl, toss together the cucumbers, red onion and tomato
Gently stir in the mayonnaise, vinegar, salt and pepper, until coated
Cover and refrigerate for at least 1 hour before serving

Recipe for the day ~ Country Style Apple Dumplings

Ingredients:
2 large Granny Smith apples, peeled and cored
2 (10 ounce) cans refrigerated crescent roll dough
1 cup butter
1 1/2 cups white sugar
1 tspn ground cinnamon
1 (12 fluid ounce) can or bottle Mountain Dew®

Directions:
Preheat oven to 350
Grease a 9x13 inch baking dish
Cut each apple into 8 wedges and set aside
Separate the crescent roll dough into triangles
Roll each apple wedge in the crescent roll dough starting at the smallest end
Pinch to seal and place in the baking dish
Melt butter in a small saucepan and stir in the sugar and cinnamon
Pour over the apple dunplings
Pour Mountain Dew® over the dumplings
Bake for about 45 minutes or until golden brown

Recipe for the day ~ Cocktail Meatballs

Ingredients:
1 pound lean ground beef
1 egg
2 Tbspns water
1/2 cup bread crumbs
3 Tbspns minced onion
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 Tbspn brown sugar
1 1/2 tspns lemon juice

Directions:
Preheat oven to 350
In a large bowl, mix together the ground beef. egg, water, bread crumbs and minced onion
Roll into small meatballs
Bake in the oven for about 30 minutes, turning once
In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar and lemon juice
Add the meatballs 
Simmer for 1 hour before serving

Ingredients:
3 cups fresh blueberries
1 (9 inch) deep dish pie crust

**For the Custard**
1 cup white sugar
1/3 cup all-purpose flour
1/8 tspn salt
2 eggs, beaten
1/2 cup sour cream

**For the Streusel**
1/2 cup white sugar
1/2 cup all-purpose flour
1/4 cup butter

Directions:
Preheat oven to 350
Place the blueberries in the pie crust shell and set aside
Combine 1 cup sugar, 1/3 cup flour and salt
Add eggs and sour cream, stirring until well blended
Pour the sour cream custard over the blueberries
In another bowl, combine 1/2 cup sugar and 1/2 cup flour
Cut in the butter with pastry blender until the mixture resembles coarse meal
Sprinkle over the top of the sour cream mixture and blueberries 
Bake for about 60 minutes or until lightly browned
Cool on a wire rack

Grilled Garlic Potatoes Recipe

Ingredients:
6 medium baking potatoes, peeled and thinly sliced
1 large white onion, sliced
3 Tbspn butter, sliced
3 cloves of garlic, minced
1 tspn chopped fresh parsley
salt and pepper to taste
1 cup shredded Cheddar cheese

Directions:
Preheat grill for high heat
Arrange potatoes, separated by the onion and butter slices, on a large piece of aluminum foil
Top with garlic 
Season with parsley, salt and pepper
Tightly seal potatoes in the foil
Place on the preheated grill and cook for about 20 minutes, turning once or until potatoes are tender
Sprinkle potatoes with Cheddar cheese, reseal foil packet and continue cooking for 5 minutes or until cheese is melted

Recipe for the day ~ Cappuccino Pie

Ingredients:
1 (9 inch) prepared graham cracker crust, chocolate
1 (3.5 ounce) package instant vanilla pudding mix
3 Tbspns instant coffee granules
1 cup cold milk
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar milk chocolate candy

Directions:
In a medium bowl, combine pudding mix and coffee granules
Add milk and whisk until smooth
Fold in 1/3 of the whipped topping 
Pour mixture into the crust
Refrigerate for 30 minutes
Spread remaining whipped topping over the pie filling
Refrigerate for additional 2 to 3 hours
If garnish is desired, soften the chocolate candy bar in microwave on low for 30 seconds
Carefully make chocolate curls with a vegetable peeler
Sprinkle curls on top of pie before serving

Recipe for the day ~ Pistachio Cream Pie


Pistachio Cream Pie

Ingredients:
1 1/2 cups all-purpose flour
1/4 cup chopped walnuts
3/4 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 tspn vanilla extract
1 cup confectioner's sugar
1 (16 ounce) container frozen whipped topping, thawed
2 (3 ounce) packages instant pistachio pudding mix
3 cups cold milk
1/8 cup chopped pistachio nuts

Directions:
Preheat oven to 350
Combine the flour, walnuts and butter - mix well
Press the mixture onto to the bottom of a 9x13 inch pan
Bake for about 30 minutes or the crust is lightly browned
Let cool
Meanwhile, mix together the cream cheese, vanilla, confectioner's sugar and 1 cup whipped topping
Beat well then spread the filling over the cooled crust
Refrigerate for 1 hour
Mix the instant pudding mix with milk until thick
Spread the pudding over the cream cheese layer
Top with remaining whipped topping, sprinkle with nuts
Optional - you can decorate with maraschino cherries

Recipe for the day ~ Bacon Wrapped Barbecue Chicken


Bacon Wrapped Barbecue Chicken

Ingredients:
16 large shrimp, peeled and deveined
8 slices bacon
Barbecue seasoning ~ to taste

Directions:
Preheat oven to 450
Wrap shrimp with 1/2 slice of bacon, securing with a toothpick
Be sure and use the large shrimp (the cooking time for the shrimp and bacon are similar)
If you use medium-sized shrimp, you may want to precook the bacon a little (over cooked shrimp are tough and rubbery)
Line a jelly roll pan with extra heavy duty foil and place baking rack in the pan
Place the shrimp on the rack and sprinkle heavily with the barbecue seasoning then turn and do the same for the other side
Let the shrimp sit for 15 minutes
The bacon will turn from a creamy white to a little opaque and the seasonings will soak in
Cook the bacon for about 10 to 15 minutes
The rack keeps the shrimp from sitting in the draining bacon fat (Plus it's easier to clean when you are done)

Ingredients:
1 cup all-purpose flour
2 tspns baking powder
3/4 cup white sugar
3/4 cup milk
1/4 cup butter
2 cups sliced fruit - peaches, strawberries, blackberries, cherries, or blueberries

Directions:
Preheat oven to 325
Melt butter in a 9x9 baking dish
Blend together, flour, baking powder, sugar and milk
Pour batter in baking dish over the butter
Sprinkle the fruit on top of batter, do not stir
Bake for 1 hour or until golden brown

Recipe for the day ~ Bacon Ranch Chicken Skewers


Bacon Ranch Chicken Skewers

Ingredients:
1/3 cup ranch dressing
1 tspn hot chile paste (such as sambal celek)
4 skinless, boneless chicken breast halves, cu into 1 inch pieces
24 (1 inch) pieces red onion
12 slices thick cut bacon
salt and pepper to taste
12 (6 inch) bamboo skewers, soaked in water for about 2 hours

 Directions:
Whisk together ranch dressing and chile paste in a large bowl
Mi in chicken pieces and toss to evenly coat
Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 3 hours
Preheat outdoor grill for medium-high and lightly oil the grate
Remove chicken from the bowl and transfer to a plate or baking sheet lined with paper towels
Pat chicken pieces dry with more paper towels
Thread a piece of onion about 1 1/2 inches down the skewer
Thread the end portion of one strip of bacon onto the skewer so that the rest of the strip of bacon is hanging down
Skewer a piece of chicken
Thread on the next portion of bacon
Turn the skewer so that the long end of the bacon is again hanging down
Repeat the process of skewering and turning until the entire strip of bacon is threaded, using 4 to 5 pieces of chicken pieces
Thread a second piece of onion onto the end of the skewer
Repeat  for all 12 skewers 
Season chicken skewers with salt and pepper to taste
Cook the skewers on the grill, turning every 4 to 4 minutes, until they are nicely browned on all sides and the meat is no longer pink in the center
It should take about 12 to 16 minutes total per skewer

Ingredients:
1 1/2 cups all-purpose flour
1 tspn baking soda
1 tspn baking powder
1/2 tspn salt
3 bananas, mashed
3/4 cup white sugar
1 egg, slightly beaten
1/3 cup butter, melted
1/3 cup brown sugar, packed
2 Tbspns all-purpose flour
1/8 tspn ground cinnamon
1 Tbspn butter

Directions:

Preheat oven to 375
Lightly grease 10 muffin cups, or line with muffin papers
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt
In another bowl, beat together bananas, sugar, egg and melted butter
Stir the banana mixture into the flour mixture just until moistened
Spoon batter into prepared muffin cups
In a small bowl, mix together brown sugar, 2 Tbspns flour, and cinnamon
Cut in the 1 Tbspn of butter until mixture resembles coarse cornmeal
Sprinkle topping over muffins
Bake in preheated oven for about 18 to 20 minutes or until a toothpick inserted into center of a muffin comes out clean

Recipe for the day ~ Easy Lemon Cookies

Ingredients:
1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 tspn lemon extract
1/3 cup confectioner's sugar for decoration

Directions:
Preheat oven to 375
Pour cake mix into a large bowl
Stir in eggs, oil and lemon extract until well blended
Drop teaspoonfuls of dough into a bowl of confectioner's sugar
Roll them around until they're lightly covered
Once sugared, put them on an ungreased cookie sheet
Bake for about 8 minutes
The bottoms will be light brown and the insides chewy

Egg Salad for a Sandwich
(Since this is what I posted that I was having for lunch yesterday decided to share the recipe)

Ingredients:
8 eggs
1/2 cup mayonnaise
1 tspn dry ground mustard
1/4 cup chopped celery
salt and pepper to taste
1/4 tspn paprika

Directions:
Place eggs in a saucepan and cover with cold water
Bring water to a rolling boil then immediately remove from heat
Cover and let eggs stand in hot water for about 15 minutes
Drain hot water, cool, peel and chop
Place chopped eggs in a bowl and stir in the mayonnaise, dry mustard and celery
Season with salt, pepper and paprika
Stir and serve on toast, your favorite bread or just crackers

Recipe for the day ~ Blueberry Dump Cake


Blueberry Dump Cake

Ingredients:
1 (18.25 ounce) package yellow cake mix
4 cups fresh blueberries
1/2 cup white sugar
1/2 cup butter, melted
1 tspn ground cinnamon

Directions:
Preheat oven to 350
Mix berries, sugar and cinnamon in the bottom of a 9x13 inch baking pan
Cover berries with DRY cake mix
Pour melted butter over the cake mix, DO NOT stir
Bake for about 30 minutes or until light golden brown

Recipe for the day ~ Basic Chicken Salad


Basic Chicken Salad

Ingredients:
1/2 cup mayonnaise
1 Tbspn lemon juice
1/4 tspn ground black pepper
2 cups chopped, cooked chicken meat
1/2 cup blanched slivered almonds
1 stalk celery, chopped

Directions:
Place almonds in a frying pan
Toast over medium-high heat, shaking frequently
Watch carefully, as they tend to burn easily
In a medium bowl, mix together mayonnaise, lemon juice and pepper
Toss with chicken, almonds and celery

 .

Recipe for the day ~ Lemon Bundt Cake


Lemon Bundt Cake

Ingredients:
1 (18.25 ounce) package lemon cake mix
1 (3.4 ounce) package instant lemon pudding
3/4 cup vegetable oil
4 eggs
1 cup lemon-lime flavored carbonated beverage

Directions:
Preheat oven to 325
Grease and flour a 10-inch bundt pan
In a large bowl, combine cake mix and pudding mix, then stir in the oil
Beat in the eggs, one at a time then stir in the lemon-lime soda
Pour batter into the bundt pan
Bake for about 50 minutes or until a toothpick inserted in the middle comes out clean
Allow to cool before inverting onto a cake plate

Recipe for the day ~ Glazed Doughnut Strawberry Shortcake


Glazed Doughnut Strawberry Shortcake

Ingredients:
2 cups heavy whipping cream
1/2 cup confectioner's sugar
1 tspn vanilla extract
4 glazed doughnuts, halved horizontally
1 quart strawberries, hulled and sliced

Directions:
Beat cream, sugar and vanilla extract together in a chilled glass or metal bowl with an electric mixer until stiff peaks form
Place the bottom half of one doughnut on a plate
Spoon 1/4 cup whipped cream onto the doughnut
Arrange 1/4 of the sliced strawberries over the whipped cream
Then spoon another 1/4 cup whipped cream over the strawberries
Top with remaining doughnut half
Repeat with remaining doughnuts, cream and strawberries

Slow Cooker Chunky Chicken Chili

Ingredients:
1 can (15 ounce) dark red kidney beans, rinsed
1 can (15 ounce) light red kidney beans, rinsed
1 1/2 cups Taco Bell ® Thick & Chunky Mild Salsa
1 can (15 ounce) no-salt added tomato sauce
2 Tbspns chili powder
1 1/2 lbs boneless skinless chicken thighs, cut into bite-size pieces
1 onion, chopped
1 cup frozen corn
1 cup Kraft® Mexican Style Finely Shredded Four Cheese

 Directions:
Combine beans. salsa, tomato sauce and chili powder in slow cooker
Top with chicken, onions and corn (DO NOT STIR)
Cover
Cook on LOW for 6 to 8 hours (or HIGH for 4 to 5 hours); stir
Serve topped with cheese

Amazing Gluten-Free Layer Bars Recipe

Gluten-Free Layer Bars

Ingredients:
7 ounces sweetened flaked coconut, divided
1 cup butterscotch chips
6 ounces semisweet chocolate chips
8 ounces unsalted peanuts
1/2 cup sliced almonds
1 (14 ounce) can sweetened condensed milk

 Directions:
Preheat oven to 350
Generously grease 9x13 inch baking pan
Spread 2/3 of the flaked coconut evenly on the bottom of the baking pan
Sprinkle the butterscotch chips, chocolate chips and peanuts evenly over the coconut layer
Pour condensed milk evenly over the baking pan
Top with sliced almonds and remaining coconut
Bake for about 20 minutes
Cool completely before cutting into squares

Recipe for the day ~ Foolproof Rib Roast


Foolproof Rib Roast

Ingredients:
1 (5 pound) standing beef rib roast
2 tspns salt
1 tspn ground black pepper
1 tspn garlic powder

 Directions:
Allow roast to stand at room temperature for at least 1 hour
Preheat oven to 375
Combine the salt, pepper and garlic powder in a small cup
Place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom
Rub the seasoning onto the roast
Roast for 1 hour
Turn the oven off and leave the roast inside
Do not open the oven door
Leave it in there for 3 hours
30 to 40 minutes before serving, turn the oven back on to 375 to reheat the roast
The internal temperature should be at least 145
Remove from the oven and let rest for 10 minutes before carving into servings

Recipe for the day ~ Fruit Dip


Fruit Dip
**With Summer right around the corner and ALL the fresh fruits available ~ this is a great Fruit Dip that my mom used to make**

Ingredients:
1 (8 ounce) package cream cheese, softened
1 (7 ounce) jar marshmallow creme

Directions:
Using an electric mixer, blend cream cheese and marshmallow creme until thoroughly mixed
Refrigerate before serving with your favorite fruit slices

Recipe for the day ~ Georgia Peach Pound Cake


Georgia Peach Pound Cake

Ingredients:
1 cup butter or margarine
2 cups white sugar
4 eggs
1 tspn vanilla extract
3 cups all-purpose flour
1 tspn baking powder
1/2 tspn salt
2 cups fresh peaches, pitted and chopped

Directions:
Preheat oven to 325
Butter a 10 inch tube pan and coat with white sugar
In a large bowl, cream together the butter and sugar until light and fluffy
Add the eggs one at a time, beating well with each addition
Stir in the vanilla
Reserve 1/4 cup flour for later
Sift the remaining flour, baking powder and salt together
Gradually stir into the creamed mixture
Use the reserved flour to coat the chopped peaches
Fold the floured peaches into the batter
Spread evenly into the prepared pan
Bake for about 60 to 70 minutes or until a toothpick comes out clean from the cake
Allow cake to cool in the pan for 10 minutes before inverting onto a wire rack
Let cool completely before serving
