Recipe for the day ~ Chicken Cordon Bleu in a Crock Pot

 

This is a very good recipe for those that are diabetic.  I got this recipe from a book called Fix It and Forget It ~ Diabetic Cookbook

Chicken Cordon Bleu in a Crock Pot

Ingredients:
3 (1 ½ lbs) whole boneless skinless chicken breast
6 (1/2 oz per slice) pieces thinly sliced ham
6 (1/2 oz per slice) think slices reduced fat Swiss Cheese
Salt to taste
Pepper to taste
6 slices bacon, gently browned but not crispy, drained and patted dry
¼ cup water
1 tspn salt free chicken bouillon powder
½ cup white cooking wine
1 tspn cornstarch
¼ cup cold water

Directions:
Flatten chicken to about 1/8-1/4 inch thickness
Place a slice of ham and a slice of cheese on top of each flattened chicken breast
Sprinkle with salt and pepper
Roll up and wrap with a strip of bacon
Secure with a toothpick
Place in Crock Pot
Combine ¼ cup water with chicken bouillon and white wine
Pour into slow cooker
Cover and cook on High for 4 hours
Combine cornstarch and ¼ cup cold water
Add to Crock Pot
Cook until sauce thickens
