Recipe for the day ~ Bread Pudding in a Crock Pot


Bread Pudding in a Crock Pot

Ingredients:
8 slices bread (raisin bread is really great to use), cubed
3 eggs
2 eggs whites
2 cups fat-free half and half
2 tbspn sugar
½ cup raisins (if using raisin bread use ¼ cup instead)
½ tspn cinnamon
Ingredients for the sauce:
2 tbpsn country crock soft margarine
2 tbspn flour
1 cup water
6 tbspn sugar
1 tspn vanilla

Directions:
Place bread cubes in greased crock pot
Beat together eggs, white, half and half
Stir in sugar, raisins and cinnamon
Pour over bread and stir
Cover and cook on high 1 hour
Reduce heat to low and cook for another 3-4 hours
Make sauce just before pudding is done baking
Begin by melting margarine in saucepan
Stir in four until smooth
Gradually add water, sugar, and vanilla
Bring to a boil
Cook stirring constantly for 2 minutes or until thickened
Serve sauce over warm bread pudding
