Lucky Shamrock Cut-Up Cake

Ingredients:
1 pkg (7 oz) Baker's Angel Flake coconut
Green food coloring
3 baked 9-inch cake layers, cooled
2 1/2 cups thawed Cool Whip whipped topping
2 large green gumdrops (for shamrocks)
1 large white gumdrop (for shamrocks)
Green decorating icing (for piping on cake)
Green decorating gel (for piping shamrocks)
**Prepare and bake 2 packages of cake mix using 9-inch round cake pans. Use 3 of the layers for this cake. Reserve remaining layer for another use**
Directions:
TINT coconut with green food coloring that has been mixed with 1 tsp of water
Leave on cake layer whole
Cut remaining 2 cakes (use the picture below a kind of your kind)
Using small amount of whipped topping to hold pieces together - arrange cake on a serving tray or platter before decorating so it does not fall apart
Frost cake with remaining whipped topping
Sprinkle with coconut
Flatten gumdrops with a rolling pin
Cut into shamrock shapes
Using decorating icing, out the cake
Using decorating gel, outline gumdrop shamrocks and place anywhere on cake
Store cake in refrigerator
