Apple and Brown Sugar Corned Beef Recipe

Apple and Brown Sugar Corned Beef

Ingredients:

4 cups apple juice
1/2 cup brown sugar, packed
1 Tbspn prepared mustard
2 (3 lb) corned beef briskets with spice packets
20 small red potatoes, scrubbed
2 carrots, cut into chunks
2 onions, cut into 8 wedges
1 head cabbage, cored and cut into large chunks

Directions:

Pour apple juice into a large slow cooker
Mix in the brown sugar and mustard, stirring until the brown sugar has dissolved
Mix in the contents of the spice packets and lay briskets into the apple juice mixture
Top with red potatoes, carrots, onions and cabbage chunks
Push all ingredients into the liquid
Cover and cook on High (4 to 5 hours) until corned beef is tender or on Low (8 to 10 hours)
Slice meat thinly across grain and serve with vegetables




FOOTNOTE:

For stovetop cooking, place meat, apple juice, brown sugar and mustard in a large covered stockpot. 
Bring to a boil
Reduce heat and simmer, covered for 40 minutes per pound of meat
Add vegetable for the last half hour of cooking
