Recipe for the Day ~ Fluffy Grasshopper Pie


Fluffy Grasshopper Pie

Ingredients:

2/3 cups boiling water
1 pkg (4 oz serving size) Jell-O Brand Lime flavor gelatin
1/2 cold water
Ice Cubes
2 Tbspn green Creme de Menthe Liquor (OR use 1/2 tspn peppermint extract)
2 Tbspn white Creme de Menthe Liquor (OR use 1/2 tspn peppermint extract)
1 Tub (8oz) Cool Whip Whipped Topping, thawed
1 9-inch baked pastry shell, cooled

Directions:

Stir boiling water into gelatin in a large bowl for at least 2 minutes until it's completely dissolved
Combine cold water and ice cubes to make 1 1/4 cup
Add to gelatin, stirring until slightly thickened
Remove any unmelted ice
Gently stir in liquor (or peppermint extract) in the Cool Whip container
Stir into gelatin
Beat until smooth
Refrigerate until mixture will mound
Spoon into pie shell
Refrigerate for 2 hours
Garnish with chocolate curls or mint sprigs

Recipe for the Day ~ Grasshopper Pudding Pie


Grasshopper Pudding Pie

Ingredients:
4 FAMOUS Chocolate Wafers, Divided (Oreo Cookies works also)
1 1/2 cups milk
1/4 tspn peppermint extract
1 pkg (4oz serving size) Jello-O Pistachio Flavored Instant Pudding
2 cups thawed Cool Whip
1 square BAKER's Semi-Sweet Baking Chocolate, chopped

Directions:
CRUSH 2 of the wafers in zip-loc bag 
Spray 8-inch pie dish with cooking spray
Sprinkle wafer crumbs into 8-inch pie dish;  set aside
POUR cold milk and extract into a large bowl
Add pudding mix
Beat for about 2 minutes
GENTLY stir in Cool Whip and Chocolate pieces
Spoon into pie dish
Top with the remainder of the wafer pieces
FREEZE for 6 hours or until firm
Let stand 10 minutes at room temperature or in refrigerator to soften before serving
Store any left over pie in freezer

Recipe for the day ~ Lemon Herb Roasted Chicken in a Crock Pot


Lemon Herb Roasted Chicken in a Crock Pot

Ingredients;

4-6 pound roasting chicken
1/2 onion, chopped
1-2 tablespoons butter
Juice of 1 lemon
1/2 teaspoon kosher salt
2 tablespoons fresh parsley
1/2 teaspoon dried thyme
1/3 teaspoon paprika

Directions:

Place the chopped onion in the cavity of the chicken
Rub the skin with the butter
Place chicken in Crock Pot 
Squeeze lemon juice all over chicken
Sprinkle remaining ingredients over chicken
Cover and cook on Low 8-10 hours or on High 4-5 hours

Recipe for the day ~ Happy Valentine's Day Cake


Valentine Cake

Ingredients:  
1 pkg (2 layer size) lemon cake mix
1 pkg (4 serving size) Jello-O Coconut Cream flavor cook & serve pudding & pie filling
1 3/4 cups milk
1 envelope Dream Whip topping mix
Red food coloring
1 1/3 cups Baker's Angel Flake coconut

Directions:
PREPARE cake mix as directed on package, baking in 2 greased and floured 9 inch heart shape pans at 350 for 40 minutes or until toothpick inserted comes out clean.
Cool completely
MEANWHILE prepare pudding mix with milk as directed on package for pudding
Cool
Refrigerate
Stir until smooth and creamy
SPLIT cooled cake layers horizontally, making 4 layers
Spread each of the 3 layers with about 23 cup filling
Stack layers
Cover with remaining cake layer
Prepare whipped topping mix as directed on package
Tint until pink with red food coloring
Spread on top and sides of cake
Sprinkle coconut around edge of top and on sides of cake
Refrigerate until ready to serve
Make sure to store left over cake in fridge
You can top cake with raspberries or strawberries

Recipe for the day ~ Chocolate Chip Cheese Ball


Chocolate Chip Cheese Ball

Ingredients:
9 (8oz) pkg cream cheese – softened
½ cup butter – softened
¾ cup confectioner’s sugar
2 Tbspn brown sugar
¼ tspn vanilla extract
¾ cup mini semisweet chocolate chips
¾ cup finely chopped pecans

Directions:
In a medium bowl, beat together cream cheese and butter until smooth.

Mix in confectioners' sugar, brown sugar and vanilla.

Stir in chocolate chips.

Cover, and chill in the refrigerator for 2 hours.

Shape chilled cream cheese mixture into a ball. 

Wrap with plastic, and chill in the refrigerator for 1 hour

Roll the cheese ball in finely chopped pecans before serving.

Recipe for the day ~ Apple Cinnamon Bread


Apple Cinnamon Bread

Ingredients:

1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped

Directions:

Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.

Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.

Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.

Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

Recipe for the day ~ Chicken Noodle Soup in a Crock Pot


Chicken Noodle Soup in a Crock Pot
Ingredients:
8 cups water or 8 cups canned chicken broth
1 cup carrot, cut into 1/4-inch slices
1 cup celery, cut into 1/4-inch slices
1 cup onion, chopped
1 garlic clove, minced
2 bay leaves
1/2 teaspoon dried thyme
4 teaspoons salt (to taste)
1/2 teaspoon fresh ground black pepper, to taste
1 (3 1/2 lb) roasting chickens (I use skinless, boneless chicken breast)
3 cups wide egg noodles, uncooked

 Directions:
In 4-1/2 to 6-quart slow-cooker bowl, combine water, carrots, celery, onion, garlic, bay leaves, thyme, 4 t salt, 1/2 t pepper.

Place whole chicken or chicken breast on top of vegetables.

 Cover slow cooker with lid and cook as manufacturer directs on low setting 8 to 10 hours or on high 4-5 hours

 Transfer chicken to cutting board. Discard bay leaves. Add noodles to slow-cooker; cover with lid and cook (on low or high) 20 minutes.

 While noodles cook, remove and discard skin, fat and bones from chicken & shred chicken or just cut the chicken breast into cubes 

Skim fat from soup and discard. Return chicken to soup to serve.

Recipe for the day ~ Sausage Cheese Balls

Sausage Cheese Balls
Ingredients:

3 cups Original Bisquick® mix

1 pound uncooked bulk pork sausage*

4 cups shredded Cheddar cheese (16 ounces)

½ cup grated Parmesan cheese

½ cup milk

½ teaspoon dried rosemary leaves, crushed

1 ½ teaspoons chopped fresh parsley or 1/2 teaspoon parsley flakes

 Directions:
 Heat oven to 350ºF.
Lightly grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x2x1 inch.
In large bowl, stir together all ingredients, using hands or spoon.
Shape mixture into 1-inch balls.
Place in pan.
Bake 20 to 25 minutes or until brown.
Immediately remove from pan.

Recipe for the day ~ Impossibly Easy Cheeseburger Pie


Impossibly Easy Cheeseburger Pie

Ingredients:
1lb hamburger (I use 80/20)
1 onion chopped (I use only about a ½ onion)
½ tspn salt
1 cup shredded cheddar cheese (I use about 1 ½ cups)
½ cup Original Bisquick mix
1 cup milk
2 eggs
1 bag bacon bits (optional but it gives it some extra flavor)

Directions:
Heat oven to 400°F.
Spray 9-inch glass pie plate with cooking spray.
In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt.
 Spread in pie plate.
Sprinkle with bacon bits.
Sprinkle with cheese.
In small bowl, stir remaining ingredients with fork or wire whisk until blended.
Pour into pie plate.
Bake about 30 minutes or until knife inserted in center comes out clean.

Recipe for the day ~ Cheesy Bacon & Tater Tot Crock Pot Bake




Cheesy Chicken, Bacon & Tater Tot Crock Pot Bake

 Ingredients:

1 (32 ounce) bag tater tots
0.5 (3 ounce) jar bacon bits (I used Hormel brand)
5 boneless skinless chicken breasts
1 1/2 cups grated colby cheese
1 1/2 cups grated monterey jack pepper cheese
3/4 cup milk
salt and pepper


 Directions:

Grease the bottom of the crock pot.
Layer 1/2 the tater tots on the bottom of the pot.
Sprinkle with 1/4 of the jar of bacon bits.
Combine the two cheeses, and sprinkle 1/3 of it over the bacon and tots.
Top cheese with the chicken breasts.
Sprinkle chicken with salt and pepper to taste.
Top chicken with another 1/3 of cheese.
Sprinkle with another 1/4 of the jar of bacon bits.
Add remainder of the tater tots.
Top with final 1/3 of the cheese.
Pour milk over the top.
Set crock pot to high and cook 3-4 hours.
