Recipe for the day ~ Striker's Potatoes O'Brien


Striker's Potatoes O'Brien

Ingredients:
6 large russet (baking) potatoes
1 large green pepper, cut into 1/2 inch pieces
1 large red pepper, cut into 1/2 inch pieces
1 large onion, cut into 1/2 inch pieces
1/4 cup vegetable oil

Directions:
Place the potatoes into a large pot and cover with salted water
Bring to a boil over high heat
Reduce heat to medium-low, cover and simmer for about 10 minutes
Drain, then set aside until cook
Once cool, cut into 1/2 inch pieces (after cutting rinse potatoes again to prevent sticking when baking)
Combine the potatoes, green pepper, red pepper, and onion in a mixing bowl
Drizzle with vegetable oil 
Gently stir until evenly coated
Spoon the mixture into a resealable freezer bags
Store mixture in the freezer
When ready to cook
Cook frozen mixture in a nonstick skillet over medium-high heat until crispy and golden brown, stirring occasionally (about 20 minutes)
