Recipe for the day ~ Almond Short Bread


These are one of my favorite cookies during the holidays

Almond Shortbread Cookies

Ingredients:

1 cup butter
1/2 cup white sugar
2 teaspoons almond extract
2 1/2 cups sifted all-purpose flour
1/3 cup granulated sugar for decoration

Directions:

In a large bowl, beat butter with 1/2 cup sugar and almond extract until light and fluffy.

With wooden spoon, stir in flour until smooth and well combined.

Divide dough into 2 parts. Refrigerate, covered for 2 hours.

Preheat oven 300 degrees F (150 degrees C).

On lightly sugared surface, roll out dough, one part at a time, about 1/2 inch thick.

Using a 1 1/2 inch round cookie cutter, cut out cookies.

Place 1 inch apart, on ungreased cookie sheet.

With end of wooden spoon, or cookie press, make an indentation in center of each cookie.

Bake 25 to 30 minutes, or until light golden brown around the edges.

While still warm, roll in sugar.


Cool completely on a wire rack.

Recipe for the day ~ Peanut Butter Smores Bars





Peanut Butter Cup S’mores Bars
 
Ingredients
⦁ 1/2 cup butter, softened 
⦁ 1/2 cup packed brown sugar 
⦁ 1/4 cup sugar 
⦁ 1 egg 
⦁ 1 teaspoon vanilla 
⦁ 1 1/4 cups flour 
⦁ 1 teaspoon baking powder 
⦁ 1/4 teaspoon salt 
⦁ 1 cup graham cracker crumbs 
⦁ 16 peanut butter cups, regular size 
⦁ 1 1/2 cups marshmallow fluff*
*Fluff is pretty impossible to measure, so this doesn’t have to be an exact amount, just kind of eyeball it. As long as you have enough to cover the PB cups, you’re good to go.

Directions

Preheat the oven to 350 degrees.
 Line an 8×8 baking dishing with parchment paper; coat lightly with cooking spray.

In a large bowl of the bowl of stand mixer, beat butter and sugars until fluffy.
Beat in egg and vanilla until combined.
Scrape down the sides.
With the mixer on low, stir in the flour, baking powder, salt, and graham cracker crumbs until mixed.
Spread 2/3 of the dough on the bottom of the prepared baking dish.
Lightly press the peanut butter cups into the dough, then spread marshmallow fluff on top.
Press the remaining dough on a non-stick surface into the shape of an 8×8 square.
Place the square on top of the fluff and press down lightly.
Bake for 30 minutes or until the edges just begin to brown.
Allow to cool for at least two hours* to give the bars a chance to set, then remove from the pan and cut into squares with a large, sharp knife.

Recipe for the day ~ Easiest & Simple Apple Cake EVER!!



Easy Fruit Flavored Cake

2 SIMPLE ingredients:
21oz can of apple (or fruit of your choice) pie filling  
 1 box of angel food cake mix.....that's it! NOTE: you MUST use the ONE-STEP (the kind that only requires water) cake mix for this to work....but DO NOT add the water!

Mix the 2 ingredients together (the dry packet of cake mix and the undrained can of fruit/filling) pour in a greased 9x13 pan or dish and bake for about 20 minutes at 350 (or according to baking directions on the box).


 A dollop or 3 of ice cream finishes it off perfectly



Here is also a recipe for those of you who love Cinnamon Streusel

Ingredients:
·         ½ cup all-purpose flour
·         ¼ cup brown sugar, packed
·         ½ stick unsalted butter
·         ½ tsp ground cinnamon
Preparation:
1.      Combine all the ingredients in a food processor and pulse until crumbly. Alternately, you can mash the ingredients together in a bowl using a fork, or just smoosh everything together with your fingers.


2.      Sprinkle over muffins, pies or coffee cake immediately before baking.
